- 1 cup brewed coffee, or 1-2 shots espresso (240 ml)
- 1/2 cup milk of your choice (120 ml)
- 3 tbsp pumpkin puree (you can easily make your own)
- 1 tbsp honey or maple syrup
- 1 tsp pumpkin spice (a mix of cinnamon, nutmeg, ground ginger & cloves)
- 1 tsp vanilla extract
- sprinkle of cinnamon (to garnish)
In a small saucepan over medium heat, whisk together milk, pumpkin puree, honey, pumpkin spice, and vanilla extract. Stir occasionally until the mixture is warm and well combined (about 3–4 minutes). Do not let it boil.
For a frothy latte, use a milk frother or blend the mixture in a blender for 20-30 seconds. This step is optional but adds a nice texture.
Brew your coffee or prepare espresso.
Pour the coffee into a mug and add the hot pumpkin milk mixture.
Sprinkle a pinch of ground cinnamon or more pumpkin spice on top for a beautiful garnish.
Adjust sweetness: If you prefer your latte less sweet, reduce the honey or maple syrup to 1 tbsp. If you want it sweeter, you can add a touch more after tasting.
Spice it up: If you're a fan of bolder spices, add an extra pinch of cinnamon, nutmeg, or ginger. You can also experiment with adding a tiny pinch of cardamom for a unique twist.
Add protein: To make the latte more filling, mix in a scoop of unflavored or vanilla protein powder. This is great post-workout or as a breakfast addition.
Collagen boost: If you're into adding collagen for joint and skin health, it can easily be mixed into the warm latte without altering the flavor.
Iced Pumpkin Spice Latte: If you prefer an iced version, let the milk mixture cool slightly, then pour it over ice before adding the coffee. Blend it for an even creamier texture, or simply stir for a chilled treat.
Storage: Make extra pumpkin spice milk mixture and store it in the fridge for up to 3 days. Just reheat a portion and add coffee when you're ready.
